For generations, local fisher families would craft a secret masala blend — using hand-pounded chillies, sun-dried spices, and freshly ground herbs — to complement the day's river catch.

I grew up tasting this iconic kulambu on visits to Hogenakkal — a recipe closely guarded by the locals, full of earthy aromas and bold, deep flavours that made every meal unforgettable.

With the blessings of those original fish kulambu makers, I bring to you this Hogenakkal Original Fish Kulambu Masala — stone-ground, sun-dried, and blended with care, staying true to the timeless methods of the region.

Cooking Instructions

1️⃣ Soak & Clean – Soak dry fish in hot water for 15 minutes, remove the head, and clean thoroughly.
உலர்ந்த மீனை 15 நிமிடங்கள் சூடான நீரில் ஊறவைத்து, தலையை அகற்றி, நன்கு சுத்தம் செய்யுங்கள்.

2️⃣ Sauté – Heat 2 tbsp sesame oil in a pan, add tempering ingredients and chopped small onion. Sauté for 2 minutes.
ஒரு பாத்திரத்தில் 2 டேபிள்ஸ்பூன் எள் எண்ணெயை சூடாக்கி, தாளிக்க தேவையான பொருட்கள் மற்றும் நறுக்கிய சின்ன வெங்காயத்தை சேர்த்து 2 நிமிடங்கள் வதக்கவும்.

3️⃣ Tomato Puree – Blend chopped tomatoes into a smooth puree and add to the pan. Cook until oil separates.
நறுக்கிய தக்காளியை ப்யூரியாகச் செய்து வாணலியில் சேர்க்கவும். எண்ணெய் பிரியும் வரை சமைக்கவும்.

4️⃣ Spice It Up – Add HOGENAKKAL KARUVADU MASALA 🌶️
2 டேபிள்ஸ்பூன் ஹோகேனக்கல் கருவடு மசாலா சேர்க்கவும் 🌶

5️⃣ Cook with Coconut Milk – Add cleaned dry fish and coconut milk. Cook on medium-low heat for 10 minutes.
சுத்தம் செய்யப்பட்ட உலர்ந்த மீன் மற்றும் தேங்காய் பால் சேர்க்கவும். மிதமான தீயில் 10 நிமிடங்கள் சமைக்கவும்.

6️⃣ Finish & Serve – Once oil appears on top, turn off the stove. Garnish with coriander leaves 🌿. Serve hot with rice, dosa, or chapati.
